Watermelon, the beloved fruit of summer known for its natural sweetness, can be easily transformed into light and satisfying beverages and dishes with a touch of creativity. This collection features two simple drink recipes, a smooth sorbet, and a refreshing salad, all crafted to showcase the deliciousness of watermelon on sunny days.

For the first drink, you will need 500g of chilled seedless watermelon cubes, 1 tsp of lime juice, ½ tsp of rock salt, ½ inch of fresh ginger, 6-8 fresh mint leaves, ¼ tsp of roasted cumin powder, a small green chilli, and optional sugar. To prepare, blend the watermelon cubes with the rest of the ingredients, ensuring the seeds are removed from the green chilli. Adjust sweetness with sugar if necessary. Blend until smooth, garnish with mint leaves, and serve chilled.

The second recipe calls for 500g of frozen seedless watermelon cubes, 1 cup of thick coconut milk, 1½ tbsp of fresh lime juice, ¼ cup of sugar, and optional lime zest. Prepare a sugar syrup by heating equal parts of water and sugar until dissolved, then cool. Blend the frozen watermelon cubes with coconut milk and lime juice until smooth. Add the sugar syrup, blend briefly, freeze the mixture in a tray for 1 hour, blend again, and freeze for an additional 4 hours before serving with a sprinkle of lime zest.

For the refreshing salad, gather 500g of chilled seedless watermelon cubes, 150g of cubed Dhaka paneer, a small cubed cucumber, thin slices of half a raw mango, fresh mint leaves, a thinly sliced green chilli, and ingredients for the dressing: olive oil, lime juice, roasted cumin powder, salt, and black pepper. Toss the paneer with lime juice, salt, and pepper, then combine with the other ingredients and dressing in a bowl. Serve chilled for a delightful mix of flavors.

Lastly, for a unique beverage, prepare 200g of frozen watermelon cubes, a green tea bag, 1 tsp of lemon juice, fresh tulsi leaves, lime zest, rock salt, and sugar to taste. Brew green tea without boiling the water, add tulsi leaves, cool, and remove the leaves. Blend the watermelon cubes until slushy, mix with the tea, lemon juice, salt, and lime zest, and sweeten as desired with sugar syrup. Serve immediately for a refreshing treat.
