However, in today’s era, it has transcended social boundaries and is now a common sight at gatherings across all segments of society.
Traditionally, wedding feasts were characterized by aromatic pulao, succulent chicken roasts, and flavorful mutton rezala. The pre-wedding ceremonies, such as engagements and gaye holud, were accompanied by tehari, while beef and porota often marked the conclusion of the celebrations. This traditional culinary landscape has now evolved, giving way to contemporary interpretations.
The evolution of kachchi biriyani as the ultimate wedding staple signifies more than just changing tastes; it reflects societal aspirations. Despite its intricate preparation process, kachchi gained popularity due to its convenience as a self-contained, flavorful dish.
